  • 3 tablespoons lime
  • 1 clove of garlic

Method of preparation:

  1. Drain and wash the chickpeas, then add it in a blender with tahini, olive oil, lime juice and garlic. Mix them for 2 minutes.
  2. Add cumin, avocado, salt and pepper and mix for another 2 minutes.

For some, the combination of dessert with avocado is a strange one, because avocado is used more in sauces, salads, guacamole, etc. But let's not forget that avocado is a fruit, not a vegetable, and can be integrated just as well in salty meats and desserts.

The creamy, fatty texture and neutral taste make avocado a versatile fruit. It can be consumed in almost any combination, and in desserts it gives a special flavor. For example, chocolate cakes with avocado, sweet creams or ice cream get a special texture, and avocado is the key ingredient.

If you have never prepared an avocado-based dessert, you can start with a simple and flavorful ice cream. The creamy texture of the fruit will make the ice cream just as creamy and flavorful.

  • 3 well baked avocados
  • 270 ml milk
  • 150 g sugar
  • 1 tablespoon lemon juice
  • 250 ml liquid cream
  • 3 yolks

Peel and cut the 3 avocados in half and put the halves together with the lemon juice and a little milk in the blender. Mix until you get a smooth paste.

Put the rest of the milk, cream and half of the sugar in a bowl on the fire and leave until the sugar has melted.

Beat the yolks with the remaining sugar with the mixer until the composition turns yellow and the sugar is melted.

Put a polish of the milk and cream mixture over the yolks and mix. Pour everything into the milk bowl and put it on the fire again.

Simmer for 8-10 minutes, or until the composition has thickened slightly. Strain the mixture and add the previously made avocado paste.

Allow to cool completely, then put in ice cream molds and place in the freezer for a few hours.

Put a pan on the fire, at medium intensity, and mix the water with the sugar. Leave on the fire, stirring constantly until the latter melts. Remove from the heat and leave to cool.

Peel the two avocados, cut and put in the blender with the sugar syrup. Add the lime juice. Mix until all ingredients are combined.

It is placed in the ice cream machine and processed according to its instructions.

If you do not have an ice cream machine, put the composition in the refrigerator until it cools completely. Cover the bowl with plastic wrap and place in the freezer. After approx. Remove for 45 minutes and mix well. Put it back in the freezer. Repeat the process 3-4 times, until completely frozen.

3. Beat the whipped cream and then put the avocado mixture on top and mix with a spatula or spoon. Put the composition obtained in a plastic box with a lid that you put in the freezer for 3-4 hours. This avocado ice cream can be served with a fruit or chocolate sauce, I chose to grate the dark chocolate.
