IngredientsMakes: 40 dumplings

  • 1 medium Chinese white cabbage, finely chopped
  • salt and pepper, to taste
  • 1 leek, finely chopped
  • 500g minced pork
  • 1 teaspoon sesame oil
  • 4 teaspoons soya sauce
  • 2 teaspoons oil
  • 1 packet dumpling wraps

MethodPrep:45min ›Cook:15min ›Ready in:1hr

  1. Place the finely chopped cabbage into a bowl and mix with sprinkle of salt, use both hands to squeeze the juice out, put the dry cabbage into a big bowl, ready for mixing with the other ingredients.
  2. In the same big bowl, add in the chopped leek, minced pork, sesame oil, soya sauce, oil, salt and pepper and mix well together.
  3. Spoon about 1 tablespoon of the pork mixture into each dumpling wrap then press the edges firmly to ensure a tight seal.
  4. Bring water to the boil in the base of a two tier steamer over a high heat. Brush the steaming level with oil then carefully place the prepared dumplings on top, seam facing upwards, and cover. Steam on high for 15 to 20 minutes, or until the pork is no longer pink.

Tip

To make sure the dumpling fillings have enough flavour and seasoning, simply just wrap one and test on the boiling water for 10 minutes. Taste before wrapping the rest of dumplings...

Leftover dumplings

With left over dumplings I always love to eat them with a bowl of clean and tasty soup: Soup ingredients :6 pieces of dried scallops, medium chopped leeks (for extra taste into soup), chicken stock, water. Others : Pak choi,finely chopped spring onionsBring all ingredients to the boil, add the pak choi at last minute, taste and ladle into the ready bowl with dumplings add a sprinkle of spring onions. Enjoy!

To serve:

I adore these dumplings with the dip of chilli garlic soya sauce. Finely chop two cloves of garlic and three birds eye chillies and place into a dipping bowl and put aside. Heat up a pan with some oil, about 2 minutes and pour the hot oil into the chilli and garlic, mix well with 5 tablespoons of soya sauce, add salt to taste.

Chinese dumplings are a universe unto themselves, and it can be difficult for Westerners to navigate because so many types of dumplings are known by various different names—its Szechuan name, its Cantonese name, and its pinyin or romanized name. Adding to the confusion, each name can have different spellings.

Combine pork, onion, cilantro, red pepper flakes, red curry paste, garam masala, chili powder, onion powder, and garlic powder in a bowl. Mix well, then set aside. Place flour into a separate bowl. Slowly stir in the water as needed until a soft dough is achieved. There may be some water left over. Roll out walnut-sized balls of dough into thin circles.

Fill each of the wrappers with about 1 tablespoon of the pork mixture. Moisten the edges of the wrapper, then fold in half, sealing to create a half moon shape. Repeat with the remaining wrappers and filling. Place the dumplings in a steamer over 1 inch of boiling water, and cover. Steam until the dough becomes glossy, about 10 minutes.

To make sauce: Combine peanut butter, cayenne pepper, sugar, and vegetable oil in a microwave-safe glass or ceramic bowl. Cook in the microwave on High for 30 seconds and stir. Serve with the dumplings.


Chinese Shrimp Dumplings (Har Gow)

Whether listed on the menu or featured on the dim sum cart at your local Chinese restaurant, har gow (xia jiao), or steamed shrimp dumplings, are often the most popular items ordered, and one of the classic dishes on which dim sum chefs used to be judged. Silky on the outside with a chewy and flavorful filling, these dumplings are made of translucent wrappers that hold a shrimp and vegetable mixture seasoned with rice wine and sesame oil. It makes for a flavorful, delicate, and light-tasting pocket of food.

The most challenging part of har gow is handling the dough, which is very sticky and can break apart easily, but as long as you follow the instructions, get multiple people involved, and don't rush, it's a rewarding effort.

These steamed dumplings are a perfect appetizer or a side dish with other dim sum classics such as buns, other dumplings filled with pork, or lotus leaf wraps. You'll need a bamboo steamer, and a heat resistant plate that fits inside it, for the dumplings, but you can find those in some supermarkets, major cities that have Chinatown neighborhoods, or online. Serve hot with hot chili oil or soy sauce for dipping.


What Makes a Crystal Dumpling

While crystal dumplings are similar to har gow dumplings, har gow are made with opaque white wrappers. It’s the addition of potato starch that makes the translucent look of crystal dumplings possible.

Wheat starch is also used for Har Gow dumplings and is what gives the wrapper a more sturdy body.

Making dumplings is really not so hard and you can get all the ingredients from regular stores: dumpling wrappers, ground pork, etc.

To me, the slightly difficult part is the folding or pleating of dumplings, an easy skill that just requires some practices and training.

If you are new to making homemade dumplings, you can just fold the dumplings into half moon shape. Soon enough, you will become more comfortable with the folding.

  • 1 cup all purpose- flour
  • 2 teaspoons corn flour
  • 1/3 cup boiling water
  • 1/2 teaspoon lard, crisco or vegetable ghee
  • 300 grams chicken breast, minced
  • 1 teaspoon corn flour
  • 1 teaspoon salt
  • 2 teaspoons soy sauce
  • ½ teaspoon white pepper
  • 1 teaspoon sugar
  • 2 tablespoon ginger root, minced
  • 2 green onion, finely chopped
  • ¼ cup coriander leaf, finely chopped
  • 2 teaspoons sesame oil
  • 1 egg white.

Method:

* Bring the chicken stock to a boil then add the soy sauce and the gelatin whisking vigorously until mixed well and no lumps are visible.

* Pour on a shallow tray and place in the fridge for at least one hour to set.

* Remove from the fridge and break it up with a fork and set aside.

* To make the wrappers mix the flour and corn starch with a fork until blended.

* Pour the boiling water and work it with a fork until it is cool enough to knead with the hand.

* Knead the dough for 5 minutes then add the either the lard or Crisco or ghee whichever is handy and knead until the dough is soft. Wrap in plastic wrap and leave aside 20 minutes.

* In a bowl place the minced chicken then add the corn flour, salt, soy sauce, white pepper, sugar, ginger root, chopped green onion, chopped coriander and mix. Finally add the sesame oil and egg white, mix, cover and set aside in the fridge for 1 hour to hold.

* Split the dough into 3 balls and roll each ball to a thickness of 2 mm and cut with an 8 or 10 cm round cookie cutter and keep the excess dough covered. Repeat the process with the other balls and finally roll out all the excess dough and repeat the cutting. This should give you around 18 dumplings.

* Place 1 small spoon of the chicken filling and 1 small teaspoon of the stock jelly in the center on the wrapper

* Fold the wrapper in half and pinch one side and at the same time pulling and pleating the edge to form a smooth fold and pressing it against the other half. Continue until you reach the other end of the dumpling and seal it. Make sure you press firmly to seal the dumpling.

* Cut out a circle of baking or wax paper to the same diameter of the steamer. Fold it and with a chop stick poke several holes to allow the steam to penetrate.

* Place it on the steamer and top with the dumplings, cover and steam for 10 to 12 minutes.

Tips:

* I opted to use all-purpose flour as it is difficult to find the Chinese dumpling flour in the Middle East.

* You can follow the same method and ingredients for the filling using any other protein you fancy such as raw shrimp, fish or any red meat.

* For a vegan dumpling use mashed soft tofu as the protein and vegetable stock with agar agar.

* To freeze simply lay the dumplings on a tray maintaining a small gap between them and place in the freezer. Once frozen transfer to a zip lock bag and keep frozen for up to 5 months. When steaming, do so from frozen and add 2 minutes to the steaming time.
