David Velasco, the beverage manager at The Lanes at The Howard in Oshkosh, Wisc., deems amaretto a “very versatile ingredient with a lot of missed potential” and especially likes the way it plays with chocolate, red and dark fruits, and spices like cinnamon, nutmeg and vanilla. This tequila sour gets some deep cocoa tones from chocolate bitters.
- 1 oz Blanco tequila
- 1 oz Amaretto
- 1/2 oz Fresh lemon juice
- 1/2 oz Fresh lime juice
- 1/2 oz Agave syrup
- 1 Egg white
- 4 dashes Chocolate bitters
- Garnish: Rosemary sprig
Add all ingredients into a shaker and dry-shake (no ice).
Add ice and shake again until well-chilled and a smooth froth forms.
Strain into a coupe glass.
Garnish with a rosemary sprig.
